NEW PROCESS FOR THE EXTRACTION OF COMPOUNDS OF INTEREST AND WINE SANITISATION BASED ON THE USE OF HIGH-VOLTAGE ELECTRICAL PULSE TECHNOLOGY

Project financed by the European Regional Development Fund (ERDF) through the Instituto para la Competitividad Empresarial de Castilla y León (ICE) of the Junta de Castilla y León, for the Thematic Objective 1, which seeks to promote technological development, innovation and quality research, in the 2018 line of R&D Projects.

File no: 04/18/VA/0049

The aim of the project is to obtain an experimental model that allows the potential of high-intensity electric pulse technology (PEAV) at the oenological level to be discovered in order to design an industrial process in accordance with market needs and to improve the extraction of compounds of interest from the grape to the must, as well as to evaluate and verify the potential of this technology for the inactivation of pathogenic microorganisms.

Development of a new system of fulling for wine.

PROJECT OBJECTIVE:
The general objective of the project is to study fulling without air exchange as a means of controlling and improving wine quality. Thus, the conceptualisation, implementation and commissioning of an automatic stirring system using magnetic stirring is proposed. This system will be used for the evaluation of the effect of the fulling on the quality of the wine deposited in barrels.

PROJECT RESULTS:
Magnetic stirring technology has been validated as a valid tool to suspend solids deposited at the bottom of a barrel (batonnage).
Project financed by the European Regional Development Fund (ERDF) of the European Union and the Junta de Castilla y León, through the Instituto para la Competitividad Empresarial de Castilla y León (ICE), with the aim of promoting research, technological development and innovation.
